How do I use speech-to-text (speech recognition)?

If you install SAPI compliant speech recognition software (eg. Dragon Naturally Speaking), Express Scribe will automatically load its Engine for use in 'Options' > 'Speech to Text'. In that same Options window you must set yourself up a profile, and once set up the text will appear from your loaded recordings in the 'Notes' pane of the Express Scribe main window.
